Gilthead bream in the oven
This is a very simple and tasty recipe I did quite often lately (also in romanian).

Gilthead bream in the oven
Ingredients
- 2 medium size gilthead bream (sparus aurata) (less than 1kg in total)
- rosemary, pickled ginger, lemon, salt, pepper, coriander, garlic
- boiled potatoes for side-dish
Method
- gut and scale the fish, take care not to break the gallbladder otherwise make sure to wash very well the spot
- season the fish well inside and out with rosemary, pepper, coriander. Inside the fish put some cut garlic, coriander and lemon. Don’t be cheap on the rosemary.
- wrap the fish with aluminum foil adding a bit of oil to avoid sticking

Gilthead bream
- let it cook in the oven for about 30 – 45 mins. I test it once with a wooden toothpick. The toothpick has to easily pierce from one side to the other.
- in the mean time boil the potatoes in salt water, when done add some butter on the top which is always nice and serve with picked cucumber for a bit of extra texture
