Mushroom soup

This is a very simple recipe which I find very rewarding after cycling in the cold.

Ingredients

  • 6-10 medium size common mushrooms
  • 2-3 potatoes
  • 1 carrot
  • fresh parsley
  • cauliflower (optional)

Method

  • slice the carrots
  • in about 1.5 litters of water add the carrots and salt and let it boil
  • in the mean time clean the potatoes and the mushrooms. Cut the potatoes in cubes and the mushrooms as desired.
  • optionally also add some cauliflower cut into small flowers
  • when the water is boiling add the potatoes and the mushrooms and let it boil until the potatoes are soft
  • serve with fresh cut parsley
  • enjoy
