<ul>
<li>dough: 1 cup flour, lukewarm water, yeast (1/2 sachet)</li>
<li>filling: salami, cheese, olives, basil, tomato sauce, spices</li>
</ul>
<h2>Method</h2>
<ul>
<li>dough: mix flour with water and yeast until it has a bread like consistency. Let it rise for 30 mins in a warm place then make a sheet of dough.</li>
<li>make a tomato sauce out of tomato paste, water, fresh cut basil, salt and pepper</li>
<li>cover the sheet with the tomato sauce then add the cheese, olives and other toppings</li>
<li>bake in the oven for 10 minutes</li>
<li>enjoy</li>

<h2><span id="more-4428"></span>Ingredients (for 4 dumplings)</h2>
<ul>
<li>dumplings:
<ul>
<li>2 cups flour</li>
<li>1 egg, 1/2 teaspoon salt</li>
<li>25g melted butter</li>
<li>2 tbs sugar, 5g dried yeast, 2-3 tbs milk</li>
<li>jam</li>
</ul>
</li>
<li>serving:
<ul>
<li>vanilla sauce</li>
<li>poppy seeds, confectioners sugar</li>
</ul>
</li>
</ul>
<h2>Method</h2>
<ul>
<li>all ingredients have to be at room temperature</li>
<li>mix sugar, milk and yeast and let them rest for 5 minutes</li>
<li>mix with the flour, egg, salt and butter, cover and let the dough rest for 30-60 min in a warm place</li>
<li>start heating 2-3 l of water with 1/2 tbs of salt</li>
<li>in the meat time cut the dough in 4 and from each piece meld a round ball with a teaspoon of jam inside. Make sure the ball does not leaks.</li>
<li>when the water is boiling gently put the balls inside, cover and let them boil for 10 minutes. The balls will float, turn them on the other side once. In a medium size pot you will be able to boil only 2 dumplings at the same time as they expand about 200%</li>
<li>drain and serve covered with vanilla sauce, poppy seeds and confectioners sugar</li>
<li>enjoy</li>

			<content:encoded><![CDATA[<p>My neighbor which I occasionally help with PC problems seeing me in the street Friday gave me a bunch of apples saying these are &#8220;bio&#8221;-apples from his house in the mountains. I should take some since he has just picked up his apple tree and has too many apples and no idea what to do with them.</p>
<p>Starting with the apples and the <a href="http://www.len.ro/2008/06/apricot-sour-cherry-cake/">sour cherry (or bilberries) cake recipe</a> this was the result:</p>

<h2><span id="more-4345"></span>Ingredients</h2>
<ul>
<li>3 eggs</li>
<li>1 cup milk</li>
<li>2 cups sugar</li>
<li>(3 cups &#8211; 2 tbs) flour</li>
<li>2 tbs cocoa</li>
<li>1 tbs baking powder (1 sachet)</li>
<li>1/2 cup melted butter</li>
<li>1 teaspoon rum extract</li>
<li>6-7 medium/small apples</li>
<li>100g walnut kernels (I got fresh walnuts from the market)</li>
</ul>
<h2>Preparation</h2>
<ul>
<li>peal the apples and cut them in small cubes (around 1cm<sup>3</sup>)</li>
<li>mix the apples with the walnuts and 2 tbs of sugar and let them aside</li>
<li>preheat the oven</li>
<li>separate the egg whites and beat them until solid</li>
<li>add the sugar, egg yolks, milk and cocoa</li>
<li>mix the flour with the baking powder and add to the composition while mixing it</li>
<li>add the butter and the rum extract</li>
<li>pour the 1/2 composition in a pan then add half the fruits on top then add the rest of the composition and the remain fruits. Don&#8217;t add the liquid the fruits lost at the bottom of the bowl.</li>
<li>cook for 30 – 45 minutes or until a wooden toothpick inserted into the cake gets out clean</li>
<li>enjoy</li>
</ul>
<p>I noticed with a fairly amount of surprise that at the beginning I had the impression there where too many apples but finally in the cake there where not so many. I think most of them dissolved thus making the composition soft and a bit wet with a nice texture yet not so easy to cut in pieces :)</p>

<p>Pentru blat:</p>
<ul>
<li>mai mult de 100g faina (jumatate de cana) si 1/2 lingurita de praf de copt</li>
<li>mai putin de 100g zahar (jumatate de cana) [da, stiu ca nu au aceiasi densitate :)]</li>
<li>4 oua</li>
<li>3 linguri de unt</li>
<li>aroma de vanilie</li>
</ul>
<p>Pentru glazura:</p>
<ul>
<li>jumatate de cana de lapte</li>
<li>1 1/2 cana de zahar</li>
<li>1 lingurita de unt</li>
<li>aroma de vanilie sau lamaie</li>
</ul>
<h2>Metoda</h2>
<p>Blatul:</p>
<ul>
<li>se bat ouale pana devin spumoase</li>
<li>se adauga zaharul si se amesteca pana ce e bine omogenizat si s-a deschis la culoare (cam 5 min)</li>
<li>se adauga faina treptat mestecand foarte incet si doar un pic. In faina se poate pune 1/2 lingurita de praf de copt</li>
<li>se amesteca usor si untul topit eventual cu o lingura ca sa nu se piarda din aerul care a fost incorporat in oua</li>
<li>se toarna amestecul intr-o tava bine unsa cu unt inainte si se lasa la cuptor pentru 30 min. Am folosit o tava de sticla prin care se si vede cand incepe sa se rumeneasca.</li>
</ul>
<p>Glazura:</p>
<ul>
<li>cam la 15 min dupa ce s-a pus la cuptor blatul se  poate incepe glazura</li>
<li>se topeste usor untul si apoi se adauga zaharul si untul intr-un ibric. Atentie: tb sa fie un ibric mare, amestecul se umfla tare.</li>
<li>se amesteca continuu pana incepe sa fiarba si apoi se da pe foc mic si se mai amesteca incetisor ca sa nu se arda inca 10 minute</li>
<li>se adauga aroma de vanilie, se lasa un pic sa se raceasca (5 min) si pe urma se amesteca pana incepe sa se intareasca. Dupa vreo 5 minute m-am plictisit asa ca am batut 5 min, lasat 10 minute la gheata si batut inca 5 min. Trebuie sa aiba o consistenta buna pentru turnat. Intre timp ar trebui sa fie gata si blatul.</li>
</ul>
<ul>
<li>blatul se lasa un pic sa se raceasca si apoi se intoarce si se acopera cu glazura</li>
</ul>
<ul>
<li>se poate servi imediat ce s-a racit</li>
<li>pofta buna</li>
</ul>

<p>Cred ca ar fi o super chestie daca as gasi o reteta de glazura de lamaie. Oricum prajitura e super pufoasa si buna. Chiar ma gandeam, in lipsa de inspiratie in ceea ce priveste numele sa o numesc prajitura minunata :)</p>

			<content:encoded><![CDATA[<p>Astazi pe la 3 tocmai am dat peste piata flotanta de la Academia Militara si cum era pe terminate am gasit doar 1kg de mere. Pe seara, dupa ce am spalat bicicleta de noroi, inghetat bocna m-am gandit ca n-ar strica sa fac o prajitura cu merele cumparate asa ca am facut un pic studiu de retete si am descoperit pe langa placinte, fie cu foi (romanesti) fie &#8220;apple pie&#8221; un alt tip de prajituri cu fructe si anume &#8220;<a href="http://www.opensourcefood.com/people/donna/recipes/apple-crumble">apple crumble</a>&#8220;. Dupa putin studiu am trecut la practica cu <span style="text-decoration: line-through;">experimentul</span> reteta urmatoare care s-a dovedit a fi una din cele mai bune prajituri cu mere pe care o stiu.</p>

<h2>Ingrediente</h2>
<ul>
<li>1 kg de mere golden (minus 1 mar pe care l-am mancat eu)</li>
<li>1 cana de faina</li>
<li>mai putin de 3/8 pachet de unt</li>
<li>1/2 cana de zahar brun</li>
<li>3-4 linguri de zahar</li>
<li>scortisoara</li>
</ul>
<p>mai apoi</p>
<ul>
<li>2 albusuri si 3-4 linguri de zahar</li>
</ul>
<h2>Metoda</h2>
<ul>
<li>am curatat merele si le-am taiat bucatele</li>
<li>am pornit cuptorul pe foc foarte, foarte mic</li>
<li>am pus merele in tava de prajituri si am pus un pic de zahar peste ele</li>
<li>faina am amestecat-o cu zaharul brun, scortisoara si untul topit. <span style="text-decoration: line-through;">Initial n-am topit untul si am incercat sa mixez asa dar fara un rezultat bun.</span> Rezultatul e ceva foarte ciudat, un fel de nisip care mi-a adus aminte de aluatul pentru <a href="http://www.len.ro/2008/06/lebanese-cookies/">prajiturile libaneze</a> desi de data asta era mult mai uscat.</li>
<li>am pus nisipul asta de aluat peste mere avand grija sa le acopar in totalitate si am pus la cuptor</li>
<li>dupa 30 minute aluatul se compactase si mirosea foarte bine insa arata cumva ciudat la suprafata asa ca m-am gandit sa fac ceva sa lege deasupra asa ca am batut bine 2 albusuri cu 3-4 linguri de zahar si am intins compozitia (de bezea) peste nisipul meu din tava cu grija mare</li>
<li>dupa inca 30 minute (cu verificari din 10 in 10 minute) tot la foc mic era gata.</li>
<li>in mod suprinzator nu s-a lipit sau ars de loc. Merele s-au caramelizat la fund iar la suprafata au cedat din lichid catre aluat care s-a compactat si omogenizat. Bezeaua de deasupra a fost pana la urma ideea cea buna care a legat toata prajitura.</li>

<p><span id="more-3014"></span>Pentru ca nu am avut foi am folosit exact reteta pentru <a href="http://www.len.ro/2008/06/apricot-sour-cherry-cake/">prajitura cu visine, afine, caise</a> cu niste mici modificari:</p>
<ul>
<li>In loc de fructe am folosit 1 kg de dovleac pe care l-am curatat de samburi si de coaja, l-am ras, l-am amestecat cu 1/2 pahar zahar si l-am tinut pe foc mic pana ce tot zaharul s-a topit si dovleacul s-a inmuiat si indulcit (cam 10 min)</li>
<li>la sfarsit am adaugat o multime de scortisoara in amestecul de dovleac</li>
<li>Intre timp am facut aluatul din <a href="http://www.len.ro/2008/06/apricot-sour-cherry-cake/">reteta pentru prajitura cu visine</a> insa in tava am pus mai intai jumatate din aluat, l-am intins, pe urma am pus dovleacul lasand loc pe margine si apoi am turnat restul de aluat deasupra.</li>

			<content:encoded><![CDATA[<p>Azi a fost frig si urat, numai bine de facut <a href="http://www.len.ro/2008/01/crepes-clatite/">clatite calde cu dulceata</a>. Ce sunt clatitele? Oua, lapte, faina si ulei. Le putem insa simplifica foarte tare daca vrem. Doar apa, faina si ulei.</p>
<p>Cand am ajuns la jumatatea clatitelor mi-am dat seama ca as putea foarte simplu sa fac si <a href="http://www.len.ro/2008/09/clatite-umflate/">pancakes</a>. Ce lipseste la clatite ca sa fie pancakes? Bule si inca un pic de faina ca sa tina bine bulele. Ce sunt bulele?</p>

<p><span id="more-2933"></span>Bulele din aluat sunt dioxid de carbon. Pui ceva in aluat ca sa faca bule si faci un aluat destul de gros ca sa tina bulele. Exista doar cateva metode sa faci bule:</p>
<ul>
<li>din drojdie (yeast). Drojdia e o chestie vie care mananca zahar si produce C0<sub>2</sub> si alcool. Zaharul vine fie din zahar pus in aluat fie din amidonul din faina care e un &#8220;zahar&#8221; mai simplu. Si asa apar bulele, mai incet, in timp ce reactioneaza drojdia.</li>
<li>din bicarbonat de sodiu (baking soda). E foarte simplu, reactioneaza cu ceva acid din aluat si produce dioxid de carbon.</li>
<li>din praf de copt. E de fapt tot un bicarbonat deja pregatit sa actioneze. Mai are agenti de afanare pentru faina sa nu se faca cocoloase in plus.</li>
</ul>
<p>Dar eram la pancakes. La aluatul de clatite am pus bicarbonat si faina si gata pancakes. Cand pui aluatul in tigaie datorita calduri porneste reactia si bulele umfla aluatul.</p>

<p>Si de aici pana la <a href="http://www.len.ro/2008/06/ataif/">ataif</a> mai e doar un pas. Daca nu prajesti pancakes decat pe o parte obtii prima parte din <a href="http://www.len.ro/2008/06/ataif/">ataif</a> care apoi se umple cu nuca, se impatureste si se prajeste mai departe in ulei.Si siropul e cam la fel, toata ideea e ca siropul sa intre in locul facut de bulele de CO<sub>2</sub>.</p>
<p>E asa de simplu, pofta buna.</p>

			<content:encoded><![CDATA[<p>M-am hotarat sa caut o reteta pentru <a title="Rozmarin" href="http://www.len.ro/cooking/raw-1/rozmarin">rozmarin</a> care nu a fost foarte incantat de cand l-am mutat inauntru asa ca am gasit <a href="http://www.opensourcefood.com/people/LianneKang/recipes/flatbread-of-rosemary-olive-and-garlic">o reteta</a> destul de simpla pe care doar o traduc (simplific) aici.</p>

<h2>Ingrediente</h2>
<ul>
<li>o cana si un pic de lapte</li>
<li>1 lingura de zahar</li>
<li>2 lingurite de drojdie</li>
<li>faina</li>
<li>o lingurita de sare</li>
<li>un pic de ulei de masline</li>
<li>rozmarin, usturoi, masline (cam o cana)</li>
</ul>
<h2>Metoda</h2>
<ul>
<li>se amesteca laptele, zaharul si drojdia si se lasa pentru cateva minute (drojdia are nevoie de lichid, zahar si caldura ca sa reactioneze)</li>
<li>se adauga sarea, ulei si faina pana aluatul nu mai e lipicios</li>
<li>se lasa 30 minute intr-un loc cald ca sa creasca</li>
<li>intre timp se curata usturoiul si maslinele si se taie in bucatele mici</li>
<li>dupa ce a crescut se pune la cuptor intr-o tava pentru 20 minute. Eu n-am avut decat o tava mica asa ca am facut de 2 ori si prima data am uitat de masline si sa pun un pic de sare deasupra. In plus nu mi-e foarte clar cum ar trebui manipulat aluatul dupa ce a crescut cred ca ideea ar fi sa-l lasi sa cresca in tigaie.</li>
