Spinach lasagna

Last Friday I went to the market and bought some spinach. It took me some time to clean it and wash it so I ended in the night with the cleaned spinach and a lot of snacks already eaten in the process. I decided just to boil it and find some usage for it on the weekend. And so the lasagna idea was born.

Red cabbage salad with mushroom soup

I’ve been craving for some fresh vegetables and for spring for some time but in the market the only thing which attracted me was a red cabbage and some mushrooms. So what I did was the very simple mushrooms soup accompanied by a red cabbage salad. Thinly cut red cabbage, softened with salt for 30 mins then added vinegar and sesame seeds.

Teriyaki salmon

Inspired by the fish soup and the teriyaki method of cooking I’ve liked so much in meat I decided to try it on fish. The method is actually quite simple, you marinate the fish (fillet) in a sauce based on soya sauce and then you grill it. What I did not knew was how to use the remaining marinade to make some delicious soy noodles (inspired from here).

Fish soup

The dream

I was visiting some friends. They has a house with white walls textured like in old houses. It felt like I was in southern France and the house was surrounded by hills. They had a wooden table with lion legs and they wanted me to cook for them. So I started to inspect their long and narrow kitchen. I searched the fridge, there was none. On the cooking table there was a fish. I my mind I knew, I had to do a fish soup. I started boiling water, cutting vegetables then I realized I did not had everything I needed. Yet the ingredients where all there: ginger, onion, noodles. I took my bicycle on a long S-shaped road along the hills covered with olives searching for … the missing piece, curcuma… I woke up.

Chapati

Yesterday I was cooking lentils (dal) curry which are one of my favorite and comfort dishes and when it was almost ready I realized I was really craving for some simple bread instead of rice so here was this very simple recipe which I realized is very similar to an indian bread (chapati).

Hummus

Cand am facut chana masala am zis sa fiu un pic eficient si am pastrat o parte din boabele fierte de naut si din lichidul in care a fiert ca sa fac hummus. Bine inteles ca l-am facut imediat, doar ca mi-a luat un pic mai mult timp sa povestesc.

Chana masala

Masala inseamna un amestec de condimente, fie pudra sos sau pasta. Asa ca reteta asta as traduce-o ca: “Naut cu amestec de condimente” si traducerea ar fi destul de obiectiva. Vezi si descrierea pe wikipedia.

Ayam masak merah

Daca ma gandesc la mancare indiana ma gandesc la un sos gros, texturat, fin, plin de aroma si caldura. Un sos care topeste carnea sau legumele cu care este servit si le leaga intr-o armonie. Desi nu e chiar o mancare indiana este o reteta autentica malaesiana ea corespunde descrierii de mai sus. E inspirata de pe un blog plin cu bunatati.

Orange mousse
