Since I have used bilberries for a lot of recipes this autumn I decided to also do the traditional “afinata” drink. This is an alcoholic drink recipe which can be used with a lots of fruits from sour cherries to bilberries.

  • 1kg bilberries
  • 500g sugar
  • 2l of tuica some other alcoholic drink can be used such as vodka (which I did not used because the commercial one surely has other chemicals) or even alimentary alcohol which must recipes use here

  • mix the bilberries with the sugar (make sure you don’t eat them all in the process) or make layers (the final one must be sugar)
  • leave for a few weeks

  • mix with the alcohol
  • leave for a few more weeks
  • filter using a fine and clean cloth
  • enjoy

  1. How would my poverty-stricken ancestors in the west of Ireland have pickled bilberries for drinks (no access to sugar, only alcohol: poteen)? Could they have made bilberry juice for consumption in the winter?

Multumesc!
