It’s almost winter now and the vegetables market reflects that feeling. The piles of cabbage felt appealing to me and I decided on a cabbage winter dish recipe (also in romanian).

Ingredients

  • 1 kg of cabbage. It’s still very soft at this time. Don’t forget that the cabbage will shrink greatly.
  • a bit of smoked meat
  • thyme, salt, pepper
  • corn flour for the polenta

Method

  • cut the cabbage in thin slices, put it in a large bowl and rub with 2-3 tbs of salt
  • let it rest for 30 mins then drain the water which remains in the bowl. The cabbage already is reduced to 2/3
  • you can use this time to prepare the polenta, I sometime add cheese in the polenta which melts nicely and gives extra flavor.
  • brown the smoked meat and set aside, will mix with the cabbage later when it’s almost soft.
  • heat some sunflower oil (2-3 tbs) then add the drained cabbage, cover
  • stir from time to time on a low flame until the cabbage is soft. It will be reduced again to about 1/4 of the original. Add the smoked meat.
  • when ready add dried thyme (also found in the market at this time). I like adding a lot of thyme, about 2-3 tbs.
  • a nice food to enjoy when outside is 6C.
