Salata de primavara cu cartofi prajiti

Pietele sunt sunt pline de verde si viata: salata, ceapa verde, verzituri, ridichi. E timpul pentru salata in minunate combinatii. Si ce combinatie mai interesanta decat salata proaspata cu cartofi prajiti si cascaval topit intr-o zi racoroasa de primavara.

A bit of color

Loboda couscous

Loboda couscous

A very simple recipe:

  • clean and cut the “loboda (artiplex hortensis)” and a bunch of green onion
  • brown the onion and add the loboda until soft (5 -10 min on a low flame)
  • add salt and pepper
  • serve with couscous

Couscous spinach

While it might seem a strange combination proved a very tasty and simple fasting idea.

  • 1kg spinach
  • 2 green onions
  • couscous

Preparation

  • clean the spinach, leave only the leaves, clean well with water
  • bring a salted cup of water to boil
  • add the spinach leaves and leave for 5 minutes to boil
  • drain and cut, keep some of the liquid
  • cut the onion and start browning it in oil or butter
  • add the spinach and half of cup of the spinach liquid and cook for 10 more minutes in the oven
  • serve with couscous
  • enjoy

Alternative

  • as an alternative I also tried pigweed with couscous, equally good and even more considering the specific flavor and the more exotic color

Ingredients

  • 1 kg spinach
  • 50 gr ham
  • a bunch green onion
  • 250 gr tagliatelle
  • butter
  • some cheese

Preparation

  • clean the spinach by leaving only the leaves
  • start boiling 200 ml water with salt (yes, that little)
  • when boiling add the spinach, it will greatly shrink
  • leave 5 min then drain well and cut
  • cut the onion
  • boil the tagliatelle, drain and wash
  • in a wok melt the butter with onion then add ham, spinach and pasta
  • leave 5 min, cut the flame, add cheese and cover
  • let the cheese melt and enjoy

The stinging nettle recipe

The stinging nettle recipe (mancare de urzici)

This is a recipe which can be done just a few times in the beginning of the spring when the stinging nettles are small. It’s a fasting recipe and even if I don’t fast I like a lot.

Ingredients

  • stinging nettles can be bought in piles. At least 4 piles are required for a 2 persons meal.
  • green onion (a bundle)
  • 3-4 garlic gloves
  • 4 tbs of flour

Preparation

  • only the leaves of the stinging nettles can be used. The rest should be thrown away. Separating the leaves from the rest of the plant is the most difficult part of the process and it takes quite a while not to mention the stinging nettle leaves sting

  • wash very well the leaves in cold watter
  • boil water with salt and at the end add the leaves until they are soft
  • keep 2-3 cups of the liquid and throw the rest
  • mash the leaves in a paste
  • cut the onion and brown it in sunflower oil
  • add the leaves, the flour and the 2-3 cups of liquid
  • cook in the oven for 15-20 minutes
  • at the end add the garlic cut in small pieces
  • serve with bread or polenta
  • enjoy
