Pasta with ramsons pesto

Ro: paste cu pesto din leurda (usturoi salbatic, usturoiul ursului) Ramsons, wild garlic or bear garlic is a plant with a very strong flavor which grows wild in the forests around the city in spring for a few weeks. It is found rarely in the markets and then only for a few days each year but in my cycling trip this weekend I found the forest ground covered with it so I could not resist to collect a big bunch to make pesto and try a recipe I’ve done only a couple of times before: pasta with ramsons pesto....

Lamb stew

Traditionally the Romanian Easter table should have at least: red eggs, lamb “drob”, cozonaci and roasted lamb. Easter red eggs This year I decided instead of roasting the lamb to make a lamb stew and it proved to be a very good choice. I have to surely retry this another time. It’s inspired by the french beef or chicken stew which take a few good hours to slowly cook until the meat fells off from the bones....

Spinach lasagna

Last Friday I went to the market and bought some spinach. It took me some time to clean it and wash it so I ended in the night with the cleaned spinach and a lot of snacks already eaten in the process. I decided just to boil it and find some usage for it on the weekend. And so the lasagna idea was born. Spinach lasagna Ingredients 1kg fresh spinach (around 500g of cleaned spinach) minced meat 300g 2 carrots 2 scallions 1 large onion 6 large mushrooms tomato sauce cheese 1 egg lasagna sheets of pasta Method clean the spinach very well from dirt and keep only the leaves then add it for a few minutes in boiling water drain the spinach but keep part of the liquid (2 cups)....

Red cabbage salad with mushroom soup

I’ve been craving for some fresh vegetables and for spring for some time but in the market the only thing which attracted me was a red cabbage and some mushrooms. So what I did was the very simple mushrooms soup accompanied by a red cabbage salad. Thinly cut red cabbage, softened with salt for 30 mins then added vinegar and sesame seeds. Teriyaki salmon

Inspired by the fish soup and the teriyaki method of cooking I’ve liked so much in meat I decided to try it on fish. The method is actually quite simple, you marinate the fish (fillet) in a sauce based on soya sauce and then you grill it. What I did not knew was how to use the remaining marinade to make some delicious soy noodles (inspired from here). Teriyaki salmon...

Chapati

Chapati Ingredients 1 cup (measure) flour 1/4 cup (measure) water 2 tbs oil of melted butter salt, spices Method mix everything with a wooden spoon knead for a few minutes divide in 6, roll each piece using a rolling pin or an empty glass bottle cook in a hot pan for a few minutes enjoy warm with various curry dishes Comments: tigerfish - Feb 2, 2010 I like many kinds of Indian roti - naan, chapati etc etc...
