As I like fish very much this a recipe I adapted from various chicked curry recipes to use fish instead. Since I wrote this recipe more than a year and a half ago I have cooked it a lot of times. But since it’s fast I cook it for lunch an there is no proper time to take a photo so I’ve only waited so long to update it with a new photo.
Fish curry
Ingredients (for 2)
- fish fillet (around 500g). You can also replace the fish with shrimps as I did while cooking for my friends I went visiting in Antibes.
- 1 onion, a bit of ginger, 1 small carrot (no need for the sweet since the coconut milk will provide it)
- spices: salt, pepper, mustard seeds, 1 tbs curry madras, 1 tbs curcuma (turmenic)
- 250ml coconut milk
Method
- wash and drain the fish then cut it in cubes
- mix with 1/2 tbs curcuma and set aside
- cut the onion then cook it in oil until slightly brown,
- add the mustard seeds for 2-3 minutes
- then the curry and stir for 1-2 minutes
- add the fish and cook on all sides
- add 1/2 cup of water or water and white wine and let it cook until the liquid has evaporated to 50%
- add the coconut milk and the rest of curcuma and let it simmer for 10 – 15 minutes
- serve with white rice or with rice vermicelli (precooked and added to the end)
- enjoy
