Last Friday I went to the market and bought some spinach. It took me some time to clean it and wash it so I ended in the night with the cleaned spinach and a lot of snacks already eaten in the process. I decided just to boil it and find some usage for it on the weekend. And so the lasagna idea was born.
Spinach lasagna
Ingredients
- 1kg fresh spinach (around 500g of cleaned spinach)
- minced meat 300g
- 2 carrots
- 2 scallions
- 1 large onion
- 6 large mushrooms
- tomato sauce
- cheese
- 1 egg
- lasagna sheets of pasta
Method
- clean the spinach very well from dirt and keep only the leaves then add it for a few minutes in boiling water
- drain the spinach but keep part of the liquid (2 cups). Cut the drained spinach in small cubes and set aside.
- cut the carrots, scallions, mushrooms and onion
- in a pan brown the onion and scallions then add carrots and scallions until soft, add spices (be creative). I’ve added salt, pepper, cumin seeds, red peppers, coriander seeds. Set aside.
- cook the minced meat then mix with the vegetables and 2 tbs of tomato sauce. Let it simmer for 5 minutes to blend the aromas. Test it. The aromas should be stronger than usual, it will dim later.
- in a baking pan set layers. Start with a layer of meat and vegetables, add lasagna sheets, then a layer of spinach, another layer of lasagna sheets, and so on. On the top it should be a layer of meat and vegetables.
- prepare the sauce by mixing the beaten egg, 2 tbs of tomato sauce, 1 1/2 cups of the spinach liquid, spices. Again this sauce aroma should be a bit stronger than you would expect.
- add the sauce to cover the layers then put the pan in the oven for 20 – 30 minutes. Add the cheese on top and put it back in the oven for another 10 minutes.
- You might not resist the urge to eat but for a photo it’s better to wait until it’s colder, it will be easier to cut in pieces.
