This is a very simple and tasty recipe I did quite often lately (also in romanian).

Ingredients

Method

  • gut and scale the fish, take care not to break the gallbladder otherwise make sure to wash very well the spot
  • season the fish well inside and out with rosemary, pepper, coriander. Inside the fish put some cut garlic, coriander and lemon. Don’t be cheap on the rosemary.
  • wrap the fish with aluminum foil adding a bit of oil to avoid sticking

  • let it cook in the oven for about 30 – 45 mins. I test it once with a wooden toothpick. The toothpick has to easily pierce from one side to the other.
  • in the mean time boil the potatoes in salt water, when done add some butter on the top which is always nice and serve with picked cucumber for a bit of extra texture

@yort: my gas oven does not have a temperature indicator, I just use a low-medium setting. Then I test it with a toothpick. If it pierces the fish from side to side with ease then it’s cooked.
