My neighbor which I occasionally help with PC problems seeing me in the street Friday gave me a bunch of apples saying these are “bio”-apples from his house in the mountains. I should take some since he has just picked up his apple tree and has too many apples and no idea what to do with them.

Starting with the apples and the sour cherry (or bilberries) cake recipe this was the result:

Ingredients

  • 3 eggs
  • 1 cup milk
  • 2 cups sugar
  • (3 cups – 2 tbs) flour
  • 2 tbs cocoa
  • 1 tbs baking powder (1 sachet)
  • 1/2 cup melted butter
  • 1 teaspoon rum extract
  • 6-7 medium/small apples
  • 100g walnut kernels (I got fresh walnuts from the market)

Preparation

  • peal the apples and cut them in small cubes (around 1cm3)
  • mix the apples with the walnuts and 2 tbs of sugar and let them aside
  • preheat the oven
  • separate the egg whites and beat them until solid
  • add the sugar, egg yolks, milk and cocoa
  • mix the flour with the baking powder and add to the composition while mixing it
  • add the butter and the rum extract
  • pour the 1/2 composition in a pan then add half the fruits on top then add the rest of the composition and the remain fruits. Don’t add the liquid the fruits lost at the bottom of the bowl.
  • cook for 30 – 45 minutes or until a wooden toothpick inserted into the cake gets out clean
  • enjoy

I noticed with a fairly amount of surprise that at the beginning I had the impression there where too many apples but finally in the cake there where not so many. I think most of them dissolved thus making the composition soft and a bit wet with a nice texture yet not so easy to cut in pieces :)

As vrea s-o incerc si eu, însă nu ma descurc cu gramajele. Cate grame înseamnă “Cup” ? Pot folosi o cană? Si cum procedez in cazul untului? Va multumim in avans (eu si cei doi băieți ai mei, mari amatori de dulciuri făcute în casă) ?
