Inspired by the fish soup and the teriyaki method of cooking I’ve liked so much in meat I decided to try it on fish. The method is actually quite simple, you marinate the fish (fillet) in a sauce based on soya sauce and then you grill it. What I did not knew was how to use the remaining marinade to make some delicious soy noodles (inspired from here).
Teriyaki salmon
Ingredients
- The marinade: soy sauce (4tbs), pickled ginger vinegar (2tbs), chili powder (1/2 tbs), galangal (1/4 tbs), cardamom crushed (3 gloves)
- 2 steaks salmon
- rice noodles
- green onions (2), 2 gloves garlic
Method
- marinade the salmon from 1-2h
- boil the rice noodles
- grill the salmon until cooked (5-10 minutes depending on the thickness)
- in a bit of olive oil brown scalions and garlic then add the noodles and the remaining marinade and stir for 2-3 minutes until all the liquid is absorbed
- serve the salmon on top of the noodles with a bit of lemon
- i’ve noticed it get’s very well with a sour drink such as red grapefruit juice
