Creme brulee, crema de zahar ars

As a child my grandmother would make this recipe and then defend each piece like a guardian. It seemed a magical threat. So when I tried it a few days ago and realized how easy the recipe is it seemed like gaining a new magical grade :) Updated 2010-01-23 with new photo(s). Dupa mai mult de 3 ore de munca asteptat si pus tava, scos tava, racit tava iata rezultatul dupa reteta mai veche de aici. Quince recipes

The quince recipes are sweet memories from my grandmother, lost and then found again. This is a combination of 2 recipes which can be done in sequence from the quince fruit. I translated here the romanian recipe for Guy which grows quinces in his backyard for which I envy him. Prajitura cu dovleac

Ieri in piata nu erau decat cartofi, dovleci, telina si conopida mov asa ca mi-am adus aminte ca am vazut o reteta cu placinta cu dovleac si am decis sa incerc desi n-am mancat aproape de loc dovleac pana acum. Iata ce-a iesit: Prajitura cu dovleac Pentru ca nu am avut foi am folosit exact reteta pentru prajitura cu visine, afine, caise cu niste mici modificari: In loc de fructe am folosit 1 kg de dovleac pe care l-am curatat de samburi si de coaja, l-am ras, l-am amestecat cu 1/2 pahar zahar si l-am tinut pe foc mic pana ce tot zaharul s-a topit si dovleacul s-a inmuiat si indulcit (cam 10 min) la sfarsit am adaugat o multime de scortisoara in amestecul de dovleac Intre timp am facut aluatul din reteta pentru prajitura cu visine insa in tava am pus mai intai jumatate din aluat, l-am intins, pe urma am pus dovleacul lasand loc pe margine si apoi am turnat restul de aluat deasupra....

Germknoedel

De cateva luni rodiq tot incearca sa ma co-intereseze in reteta asta asa ca intr-un final m-am apucat de “comanda” si iata ce a iesit: Germknoedel (reteta revizuita si poza noua pe 25-11-2009) Ingrediente 2 cani de faina 3 sferturi pachetel de drojdie (de aici tb sa vina numele) 1 ou 1/2 lingurita de sare cam 1/8 pachet normal unt 2 linguri de zahar 2-3 linguri de lapte. Laptele trebuie sa fie foarte putin, rolul lui e doar de a se amesteca cu zaharul si cu drojdia sos de vanilie (gata facut tb sa recunosc) seminte de mac zahar pudra (cu scortisoara) dulceata cat mai solida (am folosit dulceata de zmeura tare si un semi-serbet) Metoda toate ingredientele se lasa sa ajunga la temperatura camerei se amesteca zaharul, laptele si drojdia si se lasa 5 min se amesteca apoi cu faina, ouale, untul si sarea rezulta o compozitie care e prea dura ca sa fie mestecata cu mixerul se lasa undeva acoperita la cald 30 min se pune la fiert apa cu sare se fac niste galusti de coca in care se pune cam o lingura de dulceata....

Apricot (sour cherry) cake

Apricot cake – prajitura cu caise (sau visine, prune, mere) This is a very common cake here which can be done using apricots, peaches, apples, cherries, sour cherries (most common), bilberries, etc. mostly fresh. It’s quite simple to make but it has a few tricks. Updated: 15-08-2008: the bilberry cake photo Ingredients 3 eggs 1 cup milk 2 cups sugar 3 cups flour 1 tbs baking powder 1/2 cup oil or melted butter 1 teaspoon vanilla extract 1/2 kg fresh fruits with no kernel if it applies to the fruit type Preparation remove the fruits kernel if it’s the case (this is the most time consuming operation, especially for the sour cherries) separate the egg whites and beat them until solid add the sugar, egg yolks, milk mix the flour with the baking powder and add to the composition while mixing it add the butter and the vanilla extract let it rest for 10 minutes while you preheat the oven mix the fruits with a bit of flour, this will help the fruits to leave too much liquid and keep part of the composition uncooked pour the composition in a pan then add the fruits on top, don’t press them into the dough, they will fall by themselfs cook for 30 – 45 minutes be careful when you test the readiness to test around the fruits....

Crepes with jam (clatite cu marmelada) After looking at too many nice, baked recipe photos I’ve decided some measures had to be taken to satisfy the baking cravings so I combined this with some old crepes desires as so there was: jam filled crepes.
